MOLD....
the begining of the mold, incubation, or just down right fine white fuzzy stuff. While some molds are not desired this one was purchased and is now begining to take over The Pig Cave II. While originally we started it on some beef peperoni shown here, and some soprassatta, a recent batch of beef bresola is now showing signs of the same strain of mold. It sure would be nice to have the stuff grown naturally. At $15 a one time batch, it adds up.
