Soprassatta





There is a bunch of meat ready to be pulled and packaged. This is the soprassatta that just came down today. Delicious. We ate about half a stick while packaging. It had a very balanced flavor with a hint of heat at the end. This was hung on the 21st of October, so that makes it about 8 weeks old. Even thought this one came out really well, I don't think it needs to dry this long. It could be a bit dry for some people, but the flavor and texture were right on. Dried ground pieces of pig.
