Almost...

Hams from the state fair last year. This is the test slice about half way through. It was delicious. Still a few months to go, but at least its coming along. The flavor was a little salty at first, then sweet with a nutty finish. I can't wait until they have aged properly. Time... not my best friend, but necessary.
